We’ll eat and drink our fill of amazing local food and wines! And immerse ourselves in the culture and cuisine of Tuscany and Emilia Romagna as we explore this lovely area and pay behind-the-scenes visits to some of its best artisanal producers.

We will visit a cheesemaker tucked away in the hills outside of Parma, who makes the huge wheels of Parmigiano Reggiano. We’ll learn about Aceto Balsamico of Modena (the actual balsamic vinegar) and how it’s made from a small producer. We’ll hear first-hand from the artisans what makes their prosciutto, pasta, and olive oil so fabulous. And, of course, visit some excellent small wineries.

To help us more fully understand Tuscan cuisine, we’ll take several cooking classes in the lovely kitchen in the 15th century villa south of Florence. Tuscan cooking is based on the wood-fired oven and we will get hands-on experience with how it works, and then get to enjoy the results!
